The Waldorf Salad (slight remix)
This Waldorf Salad Recipe is inspired by one of my favorite chain restaurants, California Pizza Kitchen. Growing up my family and I would go to CPK or Cheesecake Factory every Saturday or Sunday for lunch. It was one of my favorite family traditions!
I hope you enjoy my take on the Waldorf Salad.
Ingredients:
1 package mixed greens
1 bunch radicchio lettuce
3 celery stalks (chopped)
1 cup walnuts (chopped)
1/2 cup pomegranate seeds
1/2 an apple thinly sliced
1 cup of gorgonzola cheese
Dressing:
1/4 cup Greek yogurt
1/4 cup mayo
1 tbsp deli mustard
1 tbsp honey
generous pinch of salt
freshly cracked black pepper
1 tsp white wine vinegar
1 lemon- juiced
Olive oil- drizzle in 2-3 tbsp
Directions:
Dressing:
Step 1: Combine all the dressing ingredients, whisk in the olive oil at the end. Put the dressing in the fridge to chill, while you prepare the salad.
Salad:
Step 2: Chop your walnuts, apple, and celery.
Step 3: Place mixed greens and radicchio lettuce at the base of the serving dish. Then add celery, walnuts, pomegranate seeds, and your thinly sliced apple. Next sprinkle your gorgonzola cheese over the top.
Step 4: Drizzle the dressing over top of your salad
Step 5: ENJOY!
