This Triple Layer Cookie Bar combines 3 of my absolute favorite things, cookies, oreos, and Rice Krispie Treats. Cookies are my favorite sweet treat so I am always looking for new ways to recreate or elevate them.
This simple, yummy, and delicious dessert will be a hit in your home. It is also a perfect recipe for when you need something easy to whip up for a friends birthday, kids bake sale, game night, etc.
Ingredients:
Rice Krispies Layer: *(follow the ingredients and the directions on back of the cereal box)
1 bag of large marshmallows
3-4 cups Rice Krispies
3 1/2 tbsp butter
1 tsp vanilla
pinch of salt
dash of cinnamon
*I usually follow the directions on the back of the box, while also tweaking the recipe and adding some of my own touches. And I always use 1 cup less of Rice Krispies then they ask for. I like my Krispies gooey so I use large marshmallows. In addition, I add vanilla and a dash of cinnamon to enhance the flavor.
Cookie Layer:
1 package or refrigerated cookie dough or homemade cookie dough
Oreo Layer:
1 package Oreos – 6 Oreos required
Baking tools:
measuring cups
square baking dish 8 1/4” by 3”
Directions:
Cookie/Oreo Layer:
Step 1: Preheat your oven to 350 degrees.
Step 2: Then spray your baking dish with baking spray.
Step 3: If using already prepared cookie dough, press the dough in the dish until it fully covers the pan in an even layer corner to corner.
Step 4: Place the Oreos on top of the cookie layer. (3 rows of 3)
Step 5: Bake the cookie layer 2 minutes less than the package or recipe instructions tells you. This will ensure a gooey center and a crispy crust. While the cookie is cooling it will still cook a little as well.
Step 6: Let the cookie cool for 5 minutes on your counter then move to your refrigerator to cool for another 20-25 minutes.
Rice Krispies Layer:
Step 7: At the 15 minute mark of the cookies cooling start your Krispies on the stove top.
Step 8: Then in a large saucepan over medium low heat, melt your butter.
Step 9: Add your marshmallows and slowly stir for 3-5 minutes, until melted. Once the marshmallows have just about melted, add your dash of cinnamon and 1 tsp of vanilla.
Step 10: Turn your heat off and add your Krispies. Stir with a non stick spatula until combined.
Step 11: Take your cookie pan out of the fridge and spray your hands with that same cooking spray so you can handle the Krispies without everything sticking to your hands.
Step 12: Layer the Krispies on top of the cookie and let cool/combine onto the cookie layers for 20 min.
Step 13: Cut your Kripies with a sharp knife in a 3 by 3 layer, (trying to follow the lines of the Oreos if you can).
