Happy Sunday Babes, and Happy St. Patricks Day! I hope everyone had a wonderful weekend and are now relaxin before a new week ahead!
I actually love Sunday nights and gearing up for a new week. By the end of the weekend I look forward to getting back to my routine and schedule.
The biggest thing about getting back into the swing of things is getting back to my healthy eating routine. I always get a little off track on the weekends as I don’t cook as much and end up eating out most meals.
My Taco Bowl Recipe
Sunday night I like to write down a list of healthy dinner tems I can eat for not only dinner but have left overs for lunch to help keep me on track!
My Taco bowl is one of my go to meals for that for sure.
Mexican food is probably one of my most favorite types of food!
If I could eat it every day I would but unfortunately, quesadillas, and all the bean and cheese burritos are not the healthiest for me, so I decided to come up with some healthier versions of some of my favorite Mexican dishes.
This Taco Bowl recipe is at the top of the list.
Two Tips:
I love to add avocado, cilantro and green onions to the top.
If you want to make the dish hearty top it over Cauliflower rice or brown rice
