Dinner Bowls are I think my favorite thing, a dish where you throw a bunch of yummy ingredients in one bowl is definitely a go-to of mine. With the new year, I am always looking for healthy hearty meals and this past winter I was in aspen and tried the yummiest Quinoa bowl I just had to try to make at home.

Not only is this bowl full of healthy goodness, it’s so hearty you won’t even need to add a meat component, Although if you wanted to you could also top it with shrimp or chicken and it would be delish.

This is definitely a vegetarian option so anyone who has given up meat this is for you!

Sesame Ginger Quinoa & Wildrice Veggie Bowls

Bag of Quinoa

Box of wild rice

1 bag frozen edamame ( you use 1 cup for 2 bowls)

1 bunch scallions

1 Avocado

1 cucumber

1 bag shredded carrots ( you use one cup for 2 bowls)

2 limes

Dressing Ingredients:

¼ cup olive oil

1 tbsp soy sauce

2 tbsp rice wine vinegar

2 tbsp sesame oil

2 tbsp honey Dijon mustard

½ lime juiced

2 garlic cloves – grated

1 tbsp freshly grated ginger

1 tsp red pepper flakes

Pinch of salt


Step 1: Make the dressing. Put all ingredients in a bowl and whisk together and stick in the fridge. The longer the flavors marinate together the better it will taste.

Step 2: On the stove top, cook the quinoa and wild rice in separate saucepans. Check each cook time for directions. *tip I made this in the morning so it would be chill when I was ready to have dinner later. So you can make it the night before if you want but also all at once too.

Step 3 While everything cooks on the stove top start chopping and grating the veggies and ingredients.

Step 4: Once the wild rice is done and cooled, I like to heat a pan up with olive oil on medium heat and add the rice to it. Once the rice is in the pan turn up the heat a little more to about a medium high and start to toast the grains. This helps crisp up the rice and adds a crunchy texture to the bowl. I heat the rice for 5 min.

Step 5: Once the rice is crispy add the rice to the bowl and mix together the quinoa, rice and dressing mixture.

Step 6: Start building your bowl.

Step 7: Finish by topping the whole bowl with one or two lime wedges.
