The first day of fall is officially one month away and I’ve been trying to soak in all the best of summer ingredients and summer eats while they are freshest.

When summer ends, it typically means school is starting back up and it got me thinking about all those yummy back to school treats….

peanut butter and jelly,

came to mind first.

Funny enough, I had recently perfected my own peanut butter cookie recipe. And so this summer treat combo came to mind immediately and I had to bring it to reality.

What’s better than ice cream on a hot summer day, a peanut butter and jelly ice cream sandwich.

This simple, sweet but savory summer treat will not only be a hit with the kids but I promise they will be enjoyed by all.

I already can’t wait to make these again and I can’t wait for you babes to try …

Ingredients:

1 28oz container of vanilla ice cream (I use Haagen Dazs)

1 container of raspberries or black berries (choose whichever you like better)

1 jar of raspberry jam or blackberry jam (whichever berry you go with, choose the same flavored jam)

1 batch of my peanut butter cookie recipe.

Directions:

Step 1: Your ice cream needs to be softened before mixing it with the berries. So once you bring it home from the store, leave it on the counter for at least an hour.

Step 2: In a medium bow, throw the container of berries in and with a wooden spoon gently break up and smash some of the berries.

Step 3: Pour the vanilla ice cream into the bowl. Mix the berries and ice cream together.

Step 4: You can place plastic wrap over the bowl and freeze it or place the ice cream into an ice cream container, cover it with a lid and freeze it overnight. (I bought 2 cute white ice cream containers from amazon to mix it in.)

Step 5: Make the peanut butter cookies.

Step 6: When you are ready to make sandwiches take the ice cream out of the fridge.

Step 7: Using 2 cookies, spread one cookie with your jam and then scoop one generous scoop of ice cream on the other cookie and sandwich them together.

Step 8: These will be ooey, gooey, and melty so ENJOY right away!
