Peanut Butter Cookies
Peanut Butter Cookies are for sure my SECOND favorite cookie, (chocolate chip being the first) so adding a peanut butter cookie to my recipes rolodex was a must.
These soft, chewy, peanut buttery, sweet, treats are sure to be a hit in your house and better yet someone else’s. Not only do I love baking cookies at home but I love that cookies are such a fun and cute gift to give.
Peanut Butter Cookie Recipe

Vegan!
No eggs, no butter, no dairy, these cookies are also perfect for everyone to enjoy.
Ingredients:
1 cup peanut butter – smooth and creamy (skip or jiffy)
1 cup flour
1 tsp salt
1 tsp baking soda
1 cup brown sugar
1 cup white sugar
1/3 cup almond milk
1 tbsp vanilla
1 tbsp maple syrup
1/2 cup powdered sugar
Directions:
Step 1: Preheat your oven 350 degrees
Step 2: In a medium sized mixing bowl add your peanut butter, brown sugar, and white sugar. Using a hand mixer, mix together until smooth.
Step 3: Add your almond milk, vanilla and maple syrup. Then mix again until combined.
Step 4: In a separate bowl sift together your dry ingredients: flour, baking soda and salt.
Step 5: Slowly add your dry ingredients to the cookie batter and mix until combined. The batter will look a little crumble and that’s ok.
Step 6: Using your hands, grab some dough and roll it into a ball. After placing all the cookies on the cookie sheet, take a fork, dip it into the powdered sugar and then press down into your cookies making a criss cross pattern. This gets you that signature old fashion peanut butter cookie.
Step 7: Bake for 8 minutes. Once you take the cookies out of the oven slam the pan on the counter twice. This allows the cookie to settle.
Step 8: Let the cookies cool for 3 minutes then take a sifter and sprinkle over some powdered sugar.
