An icebox cake is typically a cake made out of cream and some sort of filling, whether it’s berries, chocolate, pudding, cookies, or all of the above, it is a layered cake that is chilled in the fridge.

This is a NO BAKE dessert because you do not need to put it in the oven, which is one of my favorite parts. I personally love this cake because it’s soo delicious, easy to whip up and you can make so many different versions. You can make it as decadent or as light as you want depending on your taste buds or what you’re in the mood for.

Summer is S’mores season and it’s my absolute favorite summertime treat. Creating new ways to enjoy all the flavors of a S’more is fun, creative and pretty foolproof.

This dessert will be a hit at any summer gathering and so perfect for this upcoming Memorial Day.

Trust me when I say this, everyone will be asking for seconds.

How to make the best S’mores Cake

No Bake S’mores Icebox Cake

Ingredients:

1 mini bag of marshmallows

1 container of marshmallow fluff

1 container of instant chocolate pudding

1 container of chocolate fudge frosting

1 1/2 cups of milk

1/2 cup of heavy cream

2 containers of cool whip

1 bag milk chocolate chips

Directions:

Step 1: Make your chocolate pudding first. In a medium mixing bowl, add your milk, heavy cream and pudding powder and with a heavy quick whisk quickly whisk the pudding together until thick (about 2 min).The pudding needs to set for a good 2 hours in the fridge before you work with it. This will really allow it to thicken up and chill, because after all it is an icebox cake.

Step 2: While the pudding chills, take your cool whip out of the freezer and place it in the fridge, so it can thaw a bit and is easier to fold with the marshmallow fluff.

Step 3: Start with your first layer

Graham crackers: line the bottom of the baking dish.

Step 4: Second Layer

Chocolate frosting: spread a thin layer of chocolate frosting over the graham crackers.

Step 5: Third Layer

Chocolate Pudding: layer your chocolate pudding over the frosting.

Step 6: Fourth Layer

Chocolate Chips: sprinkle a good amount of chocolate chips over the pudding.

Step 7: Fifth Layer

Whipped Layer: first take the cool whip out of the fridge and in a bowl fold the cool whip and marshmallow fluff together. Then spread this mixture over the top.

Step 8: REPEAT (should be 3 layers)

Step 9: Once all the layers have been stacked, put plastic wrap over the baking dish and place it in the fridge to chill OVERNIGHT.

Step 10: The next day… & when you are ready to serve it you will top your cake with the marshmallows and can toast them one of two ways:

  1. This does require an oven. Turn your oven to broil. On a baking sheet add half the bag of mini marshmallows put in the oven and bake until ooey, gooey and golden brown. About 1-2 min, but check on them because broil can burn things quickly.
  2. Throw the marshmallows directly on top of the bake then torch the top with a kitchen torch.

Step 11: Using a spatula, slide it under the marshmallows then place the toasted marshmallows all over the top, and SERVE.

Step12: ENJOY!!
