Lemon Chicken Noodle Soup!
3 words…ANOTHER BOWL PLEASE!!
I think this is my new favorite soup… chicken noodle soup has always been my favorite but the added lemon juice and pinch of ginger elevates this comforting dish to a whole new level.
Chicken Noodle Soup is one of my go-to comfort foods especially this time of year and after trying this one you’ll be adding it to your comforts list too.
Lemon Chicken Noodle Soup Recipe:
Ingredients:
3 large carrots
1 white onion
3 large celery sticks
1 rotisserie chicken -shredded (3 cups)
1 package noodles- I use dumpling noodles- yolk free
3/4 cup lemon juice- 1-2 lemons
5 tbsp olive oil
2 boxes low sodium chicken stock
1 cup water
Seasoning:
1 1/2 tbsp salt
1/4 tsp ground ginger
1/2 tsp dried thyme
1/2 tsp fresh cracked black pepper
1/2 tsp garlic powder
1/2 tsp onion powder
Directions:
Step 1:
Start the prep. Chop your carrots, celery, and onion into equal pieces. Shred the chicken off the bone and set aside.
Step 2:
On medium heat in a Dutch oven pot, heat the olive oil for 1 minute.
Step 3:
Add your veggies to the pot and sauté for 7 minutes.
Step 4:
Add the shredded chicken, spices, noodles, chicken stock, and water to the pot and stir until combined.
Step 5:
Turn the heat up to medium high heat and bring the soup to a boil (takes 3-4 minutes).
Step 6:
Once soup is broughg to a boil turn the heat to medium low and cover the pot with the lid and let cook for 10 minutes.
Step 7:
Uncover the pot and add your lemon juice. Stir the lemon juice in and let cook for another 2 minutes on low heat.
Step 8:
Turn off the heat, give the soup a little stir and ENJOY!!
I love the soup as is but when Im craving spice, I like to top mine with red pepper flakes. Another great topping is parmesan because you can never go wrong with adding cheese.
