Happy Monday Babes!! After a weekend in Vegas I am looking forward to a fresh start and getting back to my routine more than ever, I’ve been craving all things healthy and green since my trip!! Whenever I get back to town I typically make my kale salad with chicken to jump start my week. I don’t typically eat too bad on trips and try to be as healthy as I can but my sugar intake was definitely higher when I’m away. (I don’t know if you saw on my insta I was eating a salad at the club haha .)

I spent this past weekend celebrating one of my closest friend’s bachelorette parties in Vegas . If you have ever been to Vegas you know, Vegas is a little crazyy. Vegas isn’t necessarily favorite place and I was defiantly out of my comfort zone haha, but nothing meant more to me than being there for my friend and celebrating her love.
After this weekend, I thought It would be the perfect way to slowly introduce a little tid bit of my arthritis journey with you. Also, give you a taste of whats the come because this weekend really reminded me how different Vegas or really any vacay is now, than it used to be back in the day. I’ll say I never was the life of the party but I could keep up better than I can today and a lot of that is due to my health. I was still in remission from my arthritis in high school and college, so staying up late, running off little sleep, walking in heels, drinking. Or even eating bad foods at 2am wasn’t as big of a deal and didn’t hurt my body as much.
Also, I was able to bounce back and do a lot more. Fast forward to now however and having my arthritis come back and really knowing how important health is, changed my every move especially when it comes to my health. Frankly, I can’t hang like I used too, plus if I am being honest with myself, I love my homebody ways to much and I am totally ok with that…
After all nothing is more important than your health and you can’t give 100% if you aren’t 100%.
I now have to worry about what I eat, how much sleep I get, and even though my outfit might not be as cute with shorter heels or flats, I have to listen to my body and do what is best for it. Whenever on vacation I eat a little more out of routine and I like to treat myself here and there. With that said however I learned I can’t have it all. Even my splurges now need balance.
For someone with Arthritis or really anyone with an auto immune disease it’s important to keep your sugar intake low as well as your stress levels.
People who know stress, know how difficult it can be to over come.
Not just emotionally but physically, and stress doesn’t come from the outside. What you eat and put into your body can put a tremendous amount of stress on your body. Not getting enough sleep can cause stress and inflammation, which is why it’s important to be mindful and why many months ago when I was deciding to limit my sugar intake I realized I needed to limit alcohol as well as its basically all sugar (sad face).
When I started cutting back on drinking wine and champagne (I loved enjoying wine while I cooked, and rose all day on the weekends especially on these warm summer nights), but I realized for me un-fortunately alcohol did all the above. It made me tired, it added more sugar to my diet and unfortunately is a key cause of inflammation which puts stress on your body as its hard on your liver and gut. That’s when the decision to cut it out completely for a while became easier.
I bring this up because that’s what I mean when I am talking about balance in my life these days. Honestly, I can’t be eating bad, drinking, and staying up late, so needless to say Vegas was a little different this year. I left clubs early, enjoyed water on the rocks, and tried to rest when necessary but still enjoyed myself and loved all the time with my babes.
In the end, its all about finding the right balance on what is going to make you feel great everyday.
Everyones body is different and can handle different things. I went through a lot of trial and error, and although exhausting at times as its not an overnight fix in time you will figure it out and for me in doing so I was able to get off the medication I was on after one year.
Annywasss one of my favorite parts of bachelorettes is how it brings everyone together, I wouldn’t have missed it!
I will be posting more detail about all this soon as I said, but just wanted to touch on it today. NOW moving on I thought as its a new week and I am kicking off the week right with all my favorite healthy eats, I would share with you my kale salad with chicken recipe. This recipe is definitely my go to when I want a quick, healthy and hearty meal. It really nourishes my body and fuels my soul, I could eat the entire bowl when I make it lol.
Full of so much green goodness and topped with protein, it’s the perfect weeknight meal, and even great the next day for lunch!
