Greek Tostada Recipe
I am a huge fan of the tostado. It leaves so much room for fabulous toppings, and if you’re trying to be healthy it’s like an open face taco, you can eat only what’s on top or indulge a little and enjoy the tortilla. I could eat Mexican food all day every day but thought this would be great with Greek Flavors.
Then as I thought about it more ” I thought to myself, well duh, it’s just an open face pita” lol
So, Open face Pita, Greek Tostada, whatever you want to call it, I think you’ll be adding this recipe to your dinner menus.
It is packed with such fresh and yummy flavors, it hit every note for me. A tad spicy, a little acidic, a little creamy, a lot of crunch, what more could you ask for.
1 red bell bell pepper
1 orange bell pepper
½ red onion
1 English cucumber
1 serrano chili
1/4 cup olive oil
½ tsp oregano
½ tsp salt
¼ tsp garlic powder
2 garlic cloves
1 package of mini Naan Bread (comes with 4 pieces)
2 boneless skinless chicken breast – (preferable pounded)
1 tbsp oregano
½ tbsp salt
¼ tsp black pepper
½ tsp garlic powder
¼ onion powder
½ tsp red pepper flake
½ cup olive oil
¼ tsp cumin
Step 1: Chop your chicken into bite sized pieces (quarter size) and in a bowl, add the chicken and the Chicken Seasonings recipe. Toss together and let sit while you heat your pan
Step 2: While the chicken marinates a bit, chop your veggies (all the veggies in the Salad Recipe) and put in a bowl.
Step 3: Make the Salad Dressing. Add the dressing to the Salad and place in the fridge.
Step 4: Get your cooking skillet out, add a dash of olive oil, and on medium heat, heat the pan for 1 min.
Step 5: Add the Chicken to the pan, and turn up to a medium high heat, to cook the chicken for 3 minutes until brown. Turn the heat down to medium low and cook for another for 7-8 minutes. Stir the chicken around the pot every couple minutes so it cooks evenly.
Step 6: While the chicken Cooks prep the Tzatziki or pull the dip out of the fridge if you made it the night before.
Step 7: On the stove heat your Naan Bread. On medium low heat, heat a skillet, add the bread, one at a time and heat 45 seconds on each side.
Step 8: Build your Tostada. Naan first, Tzatziki ontop, Veggie Salad, Top with Chicken.
