With having just come back from the beach Monday night and driving right into the heat, I am already wanting to book a trip back! I hope you all had a wonderful weekend and are off to another great week.
We spent the weekend unplugging and spending quality time together. One of my favorite things to do when we’re at the beach is BBQ. I don’t know if it’s me but everything just tastes better by the water. :]
Classic Panzanella Salad Recipe
Labor Day is around the corner…
I wanted to share with you guys my classic Panzanella salad. Perfect to bring to any get-together/gathering you’ll be going to or hosting that weekend.
Panzanella Salad
This salad is one of my favorites because for someone like me who doesn’t eat red meat and has reduced my chicken intake, I love a salad that is hearty enough, I don’t feel I am missing the “protein” component.
Luckily the feta acts as good protein for the salad.
Nathans family is Lebanese so I was first introduced to this salad with his family and they actually call it the fattoush salad. Everyone has a different take on this salad which I love because you can’t really go wrong. You can create it to your taste.
Similar to a Greek salad, it is basically the same ingredients but taking out the lettuce and adding croutons. Who knew that simply taking out the lettuce (what you think makes a salad) actually makes it THAT much better.
I would probably eat this salad every day if I could, it has all of the components I love, crunchy, savory, salty and full of fresh herbs and spices.
From the bell peppers, to the sweet cherry tomatoes, the bite the red onion gives and the savoriness of the feta cheese you can’t go wrong. This Classic Panzanella Salad recipe is refreshing, healthy, and pretty simple to make!
