BLT Avocado Salad
One of my absolute favorite sandwiches is the BLT *add Avocado! I could eat that weekly, however with trying to switch things up I thought taking the bread away is a great and healthier alternative to do just that. This salad is also great because it contains a lot of ingredients you probably already have in your fridge.
As the temperatures heat up this BLT Avocado Salad is perfect for cooling down, with the light and creamy dressing as well. Instead of the mayo or aioli I also toned down the dressing, made it a little healthier but still kept a lot of flavor!
Ingredients:
1/2 pound of thick cut bacon
1 avocado
2 chicken breasts
1/2 container of cherry tomatoes
Spring Mix
Butter Lettuce
Dressing:
1/2 cup Greek yogurt ( preferably 2% fat)
1 lemon – juiced
1 tbsp red wine vinegar
1/4 cup olive oil
1 tbsp ranch dry mix
2 pinches of salt
Pinch of cracked black pepper
Directions:
Step 1: Pre Heat oven to 420 Degrees
Step 2: Add your bacon to a sheet pan and bake in the oven for 30-35 min. While the bacon cooks, start working on the dressing so you can then put it in the fridge to let the flavors really marinate together.
Step 3: Once the dressing is done, start with your chicken, season your chicken breasts with salt, pepper and garlic salt. Heat olive oil in a skillet and sear both sides for 2 minutes each side.
Step 3: Once seared, in an oven safe dish put the chicken in the oven to cook for 10-12 minutes. It can go in with the bacon as it will cook on the same temp.
Step5: While everything is cooking in the over start getting the salad ingredients chopped and ready. I like to use 2 parts spring mix to 1part butter lettuce, I think the butter lettuce pairs really yummy with the dressing so I like to add it. Dice up your avocado to bite sized pieces, half your cherry tomatoes and put those in the fridge until you’re ready to take the chicken out of the oven and prepare the whole salad.
Step 6: Pull the chicken out, let the chicken rest for 3-5 minutes. Start to cut it up into bite sized pieces or chunks. By the time you have cut everything up, your bacon should be done. Depending on how crispy you like it, check it and take it out or leave it in if you want extra crispy bacon.
Step 7: While the bacon cool, start assembling the salad. I like to lay this salad out to display all the ingredients in a row like you see in my photo but you can also just toss it all together. Either way tastes just as good. :]
