With only 1 month of summer left, I was starting to think about all the warm and delicious fall recipes I wanted to make and for some crazy reason Biscuits and Gravy came to my mind.
I literally had a dream about them and woke up needing to test out the recipe, and so I did just that. In fact, over the weekend I tested out my Biscuits and Gravy recipe and I have to say it’s everything I dreamt it would be and more.
Even though the classic biscuits and gravy is good as is, I wanted to elevate it a little bit by cracking some eggs on top. In addition, the egg and biscuits cook at the perfect time leaving the eggs that yummy over medium. I never like my eggs runny and I think especially in this dish, having the eggs less runny is better.
This yummy, savory, and decadent brunch dish will keep you and your family full and warm through the fall and winter season…

Ingredients:
Gravy:
1 16oz package of breakfast sausage
1 white or yellow onion diced
1/2 cup gruyere cheese
4 tbsp butter
4 tbsp flour
2 cups milk
1 tsp dried thyme
1 1/2 tsp salt
1/2 tsp red pepper flakes
1/2 tsp garlic powder
1/2 tsp cracked black pepper
3 tbsp olive oil
fresh thyme
5 eggs
Biscuits:
1 box of BisQuick (follow the directions on the side of the box for ingredients and for the directions of 1 serving of biscuits, should make 5-6 biscuits.
*you’ll need milk
Directions:
Pre Heat Oven to 450 degree’s
Step 1: In a skillet on medium heat, (preferable cast iron) add 1 tbsp of olive oil and brown your sausage. About 5 min, then discard sausage into a med. size bowl.
Step 2: In the same skillet add the remaining 2 tbsp olive oil, your onion, 1/2 tsp salt,1/2 tsp dried thyme and sauté until translucent, about 5-7 min. Discard into the same bowl with the sausage.
Step 3: Add your butter to the skillet, wait until it melts, then add your flour. Mix the flour in for about 1 min until it blends with the butter.
Step 4: Add one cup of milk in at a time and continue to stir so the flour and butter mixture can incorporate smoothly. Then stir and sauté for 1 more min.
Step 5: Add your shredded cheese, remaining salt, remaining thyme, garlic powder, red pepper flake, and cracked black pepper, and stir until smooth. About 3 minutes.
Step 6: Add your sausage and onions back to the pan, stir until everything is covered nicely. Turn heat off and let sit.
Step 7: Make your biscuits. Combine the Bisquick dough with the milk and using your hand or a wooden spoon combine the dough. I take chunks of the biscuit dough and then place it onto of the gravy as I please.
Step 8: Take a little spoon then push down in the gravy mixture to create a little creator to crack your egg into. Repeat 5 times for all the eggs.
Step 9: Brush the biscuits with butter all over and then place in the oven. Bake for 8 minutes.
Step 10: Remove from the oven and let sit for 2 minutes be serving.
