BBQ Chicken Pizza
One of the most underrated pizzas, in my opinion, is BBQ chicken. I feel like it really hits both sweet, and savory notes and I am HERE FOR IT. Pizza is just one of the best things to put out for a party because it feeds a crowd, is always a crowd-pleaser and you can do so many different flavors.
You don’t need a reason to have a pizza party in my opinion but Super Bowl is coming up and it would be the perfect time to try it out. You may not be rooting for the same team at the party but everyone is always TEAM PIZZA.
BBQ Chicken Pizza Recipe
2 chicken breasts
1 small red onion ( ½ for the instant pot ½ to top)
2 serrano chilies (1 inside the instant pot, one to dice on top of the pizza)
1 1/2 cup good BBQ sauce (whatever your favorite brand is ( ¾ for the instant pot and ¾ for the crust of the pizza.)
¾ cup sweet n sour sauce
½ cup chicken stock
¾ cup corn
Cilantro (for garnish)
Pizza Dough – store bought
Step 1: chop your Ingredients. I like to dice the chilis and thinly slice the red onions so they are nicely chopped when you put them on the pizza.
Step 2: Plug in your instant pot and throw all the ingredients in, close the lid and pressure cook on high for 25 minutes.
Step 3: Pre Heat your oven to 450 degrees
Step 4: While the oven heats up start to toss or stretch your pizza dough until it’s the size or shape you want. I used a small sheet pan and stretched the dough 1 inch thick to a rectangle. Prick the dough with a fork and then pre bake your pizza for 8 minutes
Step 5: Take the pizza out and set to the side.
Step 6: Once the instant pot timer is done, let the air out, open the lid and shred the chicken.
Step 7: Spread the remaining BBQ on top of the dough. Using tongs take the chicken and ingredients out of the pot and spread over the pizza.
Step 8: Dice the last serrano chili and place it on top of the pizza. Thinly slice the second half of the onion and place it all over the top of the pizza.
Step 9: Put the pizza in the oven and bake for 15 minutes
Step 10: garnish the pizza with the cilantro and drizzle 2 table spoons of sweet n sour sauce over the top.
Step 11: SLICE IT UP and SERVE
