Baked Brie with Peaches

With summer a month from making its way out, I wanted to finish the summer strong by using and making dishes with ingredients fresh of the season.

Peaches are very ripe in the summer and they are the perfect pair for a savory, sweet dish. I think stone fruits pair really nicely with cheese, so I decided to do a baked brie with peach jam and fresh peaches.

This summer appetizer is perfect for an outside BBQ or a small gathering because it feeds a lot and is filling.

Baked Brie with Peaches

With a total of 45 minutes from prep to finish, this will be a hit to all your guests.

You can serve it up with anything, but I like to pair it with two different type of crackers and a fruit or veggie option. To continue with the peach theme, I sliced the other half of the peach for another dipping component.

Baked Brie with Peach Jam and Fresh Peaches

Ingredients:

1 sheet puff pastry dough (thawed)

1 8oz brie wheel

1/2 cup peach jam

1 peach ( 1/2 for baking, 1/2 for dipping)

2 tbsp butter

1 tbsp brown sugar

1/4 tsp salt

1 tsp flour

Directions:

Pre Heat Oven to 400 degrees

Step 1: On your work surface sprinkle some flour and unfold your puff pastry dough.

Step 2: Roll out the puff pastry two times vertically and two times horizontally with your rolling pin. This stretches the dough a little further so it can wrap nicely around the brie.

Step 3: Place the brie in the center of the puff pastry.

Step 4: Spread your jam on top of the brie and place the peach slices on top of the jam and nicely around it. It should look like a wheel (about 5-6 peach slices will fit).

Step 5: Sprinkle with salt

Step 6: Fold your puff pastry one corner to the center at a time. Once you get the last corner, form a little top knot on top.

Step 7: Melt your 2 tbsp of butter and brush it all over the dough. Then sprinkle on the brown sugar.

Step 8: Bake for 30 minutes.

Step 9: Serve immediately and ENJOY!!
