Fireside Chili, Yes Please!!!
Tis the season for getting warm by the fire and eating all the warm and comfy food we can eat. Chili is one of my favorite foods, white bean chili, veggie chili, chicken chili, or 3 bean chili, I will really eat any kind. A lot of what I love about it though are the toppings, I’m a big toppings girl.
Cheese, crunch, spicy, sour cream, I’ll take it all.
3 Bean Chili Recipe
How to Make 3 Bean Chili
Ingredients:
2 large carrots –chopped
2 small bell peppers – chopped
1 white onion – chopped
1 cup crushed tomatoes
2 jalepenos – diced
1 can pinto
1 can black
1 can kidney
2 tsp salt
1 tsp cumin
¼ tsp onion powder
½ tsp garlic powder
¼ tsp white pepper
1 ½ tbsp. chili powder
Directions:
Step 1: Brown the beef in the pan for 2 min on medium high heat then with a slotted spoon set the beef aside on a plate and drain the fat
Step 2: Add olive oil back into the dutch oven and on medium- medium high heat sauté the onions, carrots, bell peppers and jalapenos add a pinch of salt and then cook for 8 min with the pot covered.
Step 3: Un Cover the pan and add the garlic and let it get the dish fragrant for 1 min before adding the crushed tomatoes, beef and the rest of the spice mixture and stir.
Step 4: Add the beans and the chicken stock then turn the heat to high and let it get up to a boil.
Step 5: Once it’s at a boil turn the temperature back to low and let it simmer for 12-15 minutes (lid on the pot)
Step 6: Add ½ cup sour cream and a pinch more of salt and stir until the cream is incorporated.
